Try out this delicious fresh sea scallop salad loaded with dynamite sweet and savory flavors to excite your taste buds. The wild Sea scallops are an excellent source of iodine, a trace mineral needed to produce thyroid hormone, making this meal excellent for Energetic Integrator (EI) 9: Thyroid/Triple Burner Meridian.

Wild Pan Seared Scallops with Citrus & Fennel

Prep Time: 15-20 minutes
Serves: 2-4

Ingredients:

  • 12 Large Wild Sea Scallops
  • 1 Tbsp Coconut Oil
  • Fresh cracked pepper to taste

Salad

  • 1 Organic Fennel Bulb (trimmed with fresh fronds reserved for topping)
  • 4 Organic Red Radishes or 2 Watermelon
  • Radishes (washed and trimmed)
  • 2 Organic Navel Oranges
  • 1 Large Organic Ruby Red Grapefruit
  • 1 Shallot (sliced)
  • 1⁄4 Cup Toasted Hazelnuts (coarsely chopped)
  • 1⁄4 Cup Fresh Mint Leaves

Dressing

  • Juice of 1 Orange, 2 Tbsp
  • 1⁄2 Tsp Organic Dijon Mustard
  • 2 Tbsp Extra-Virgin Olive Oil
  • 1 Tbsp Fresh Thyme (chopped)
  • Salt and Pepper to taste

Instructions:

  1. Rinse and pat dry the sea scallops’, then season with salt & pepper. Set aside.
  2. Trim the grapefruit and oranges with a sharp knife paring off all the skin and white pith. Cut the fruit into thin slices. Using a mandoline, cut the fennel and radishes into very thin slices.
  3. Arrange on a serving platter with sliced shallots and fresh mint leaves.
  4. For the dressing, add all of the ingredients to a small blender and blend until smooth. Set aside.
  5. Heat the coconut oil in large skillet over medium-high heat. Sear the scallops on each side until golden brown, about 1-2 minutes per side.
  6. Top with the seared scallops and drizzle evenly with dressing. Garnish with toasted hazelnuts and fennel fronds.
